The three different colors in this pudding stay separate even after stirring, creating a confetti-like visual effect. You’ll need three containers to make each flavor separately and give the chia seeds time to swell completely before combining the colors. Vanilla, chocolate, and matcha are featured here, but it’s easy to explore other color/flavor combinations using the standard proportions of 1 cup sweetened milk + 1/4 cup chia seeds + something colorful, such as saffron or açaí. If you use dairy-free milk, you may need to reduce the amount of chia seeds to achieve the desired consistency.

For the vanilla pudding, combine:
- 1 cup milk
- 1 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 cup white chia seeds
Stir well and set aside. For the chocolate pudding, stir well:
- 1 tablespoon maple syrup
- 1 tablespoon unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
When thoroughly combined, add:
- 1 cup milk
- 1/4 cup chia seeds
Stir well and set aside. For the matcha pudding, stir well:
- 2 tablespoons agave syrup
- 1 tablespoon matcha
- 3 drops lemon essential oil
When thoroughly combined, add:
- 1 cup milk
- 1/4 cup chia seeds
Stir well and set aside. Stir each flavor from time to time to keep clumps from forming, allowing at least three hours for the chia seeds to swell completely. Once all the colors have set, combine equal amounts of the three puddings in custard dishes and stir together. Garnish with fresh fruit. Serves 6–8.
